June Day In The Life
June day in the life of a work at home, homeschool mom.
It has been such a long time since I vlogged but it is something that has always brought me a lot of joy. I love the process of recording our days, editing, sharing and looking back on memories of our everyday from years past. I am on a healing journey and starting to come back to some things I let go of, over the last few years and lifestyle vlogging/blogging is one of them.
Check out the vlog below and keep scrolling for the recipes of what I made on this day day. I used my Salton Power Blender all day this day, it is currently my most used kitchen appliance and I love it so much! It blends really smooth and can handle everything from a bullet proof mushroom coffee to grinding nuts.
Fun Cakes (pancake alternative)
4 eggs
1/2 cup oats
blend until fully combined
heat pan and throw in some coconut oil
pour on your mixture to desired fun cake size and fry
serve with maple syrup
Mushroom Coffee Latte (in the video I featured a coconut milk approach on the stove but since then I have been doing the following and prefer it)
In a blender combine
2 scoops mushroom coffee
1 scoop protein poweder
1 scoop coconut oil
1 scoop powder collagen
dash of cinnamon
dash of turmeric
Add about two cups boiling hot water to your blender
let cool for a few minutes and release steam
cover lid with a dish towel and blend with caution
I recommend you enjoy this drink in your favourite mug while grounding in your yard
Day Cake (this is a carrot bake I got from one of my fellow Beachbody Coaches Niki Whiting, that I altered a little)
1lb bag carrots
12 eggs
1 cup oats
3 tsp cinnamon
2 tsp baking powder
vanilla
4-6 dates
1/4 maple syrup
1/2 pumpkin (optional)
blend all ingredients in blender until smooth
pour in a 9x13 greased pan
bake 350 for 30-40 mins
let cool completely
cover and store in refrigerator
enjoy warm or cold and top with peanut butter, more syrup or hazelnut spread
Chocolate Hazelnut Spread
1 cup raw hazelnuts
1/4 cup cocoa powder
1/4 cup maple syrup
add all ingredients to a blender
pour in little bits of water to get all the ingredients moving and continue until desired texture.
store in fridge
Let me know if you try any of the recipes and how you liked them.
Happy homemaking, Heather
